Chocolate Brownies
Makes 12 fingers
- dark chocolate 200g
- butter 140g
- sugar 175g
- eggs x3
- vanilla 2 tsp
- baking powder 1 tsp
- flour 75g (I use bread flour but all-purpose works too)
- In saucepan over low heat, melt butter, then melt chocolate
- In mixing bowl, whisk together sugar, eggs, and vanilla
- Pour in the chocolate, add the flour and baking powder, and mix
- Pour into baking dish, aiming for ~2cm depth
- Cook at 150C (fan) for 45 mins

Ingredients
- 300g dark chocolate
- 230g butter
- 340g caster sugar (or white sugar)
- 3 large eggs
- 3 tsp vanilla extract
- 1 shot of espresso, or 1 tsp coffee powder
- 110g plain flour
- 2 tsp baking powder
- Pinch of salt (unless salted butter was used)
- 100g chopped nuts (pecans or walnuts)
Method
- Preheat over to 160C fan.
- Melt chocolate and butter
- In another bowl, mix together sugar, eggs, vanilla, and espresso.
- Combine the two.
- Add the flour and baking powder.
- Stir and pour into a greased or parchmented baking tray. (24cm x 44cm x 3cm)
- Cook for 30-35 mins. Don’t overcook.

- 3 eggs (to be whisked with sugar)
- 200g sugar
- 1tsp vanilla
- 100g plain flour
- 100g chopped nuts
(Bake for 25 mins)
