Spotted Dick
- flour 200g
- 2.5 tsp baking powder
- suet 100g
- light brown sugar 55g
- milk 160ml
- sultanas
- lemon x1 (zest)
- Sift baking powder into the flour
- Rub suet into flour
- Add sugar, a pinch of salt, and saltanas; mix
- Add milk and stir. It should be claggy
- Grease pidding tin with butter
- Spoon in the mixture; it should leave some room at the top
- Cover with parchment, trim edges
- Cover with tin foil, secure with rubber bands
- In the saucepan, place a small dish or something as a stand to elevate the pudding tin
- Add water until it reaches the top of the stand
- Place the pudding tin on the stand, put the lid on
- Steam for 1h 30m, topping up the water every 30 mins
Custard
- eggs yolks x6
- caster sugar 6 tsp
- double cream 400ml
- vanilla paste 1 tsp
- Heat cream in pan, stir in vanilla paste
- Beat sugar into the egg yolks
- As soon as cream starts to bubble, take off the hear
- Pour cream into eggs slowly, mixing
- Back into pan and onto low heat
- Stir continuously to prevent lumps forming. It will thicken quite suddenly
