Spotted Dick

  1. Sift baking powder into the flour
  2. Rub suet into flour
  3. Add sugar, a pinch of salt, and saltanas; mix
  4. Add milk and stir. It should be claggy
  5. Grease pidding tin with butter
  6. Spoon in the mixture; it should leave some room at the top
  7. Cover with parchment, trim edges
  8. Cover with tin foil, secure with rubber bands
  9. In the saucepan, place a small dish or something as a stand to elevate the pudding tin
  10. Add water until it reaches the top of the stand
  11. Place the pudding tin on the stand, put the lid on
  12. Steam for 1h 30m, topping up the water every 30 mins


  1. Heat cream in pan, stir in vanilla paste
  2. Beat sugar into the egg yolks
  3. As soon as cream starts to bubble, take off the hear
  4. Pour cream into eggs slowly, mixing
  5. Back into pan and onto low heat
  6. Stir continuously to prevent lumps forming. It will thicken quite suddenly
